Wasabi is a kind of Japanese horseradish that is very spicy. The spicy taste is much more intense than a hot mustard or hot pepper. Wasabi vapors stimulate the nasal mucosa more than the tongue.

Wasabi is much more expensive than regular horseradish, because it is much more perishable than it and harder to stabilize in the product. Once the paste is placed on a preparation, it must remain covered to prevent the flavor from evaporating. Therefore, when preparing sushi, wasabi is placed between fish and rice.
