Our pasta is artisanal, rolled and dried at a maximum of 43 degrees.

The pasta was obtained by rolling and not by extrusion (pressing), thus preserving the fiber structure and not heating the dough. The pasta will remain more stable and consistent, with a better gugst. The water used is not from the supply network but comes from a mountain spring, and the drying was done at low temperatures.

In industrial production, pasta is dried in 3 to 4 hours at temperatures of up to 130 degrees. In our manufacture, drying lasts up to 2 days, so the nutrients remain unchanged. which improves the taste.
