Instant Miso White Soup with Algae Clearspring - 4 servings (4 x 15g) of white miso paste for instant seaweed soup. It is a less spicy, lighter sweet version that expands the range of flavors of Miso Clearspring products.

Miso, a traditional Japanese food and spice obtained by fermentation, has long been appreciated for its rich taste and high concentration of nutrients. It is obtained from whole soybeans and a special fermentation culture (koji) and is matured naturally in cedar barrels for many months at ambient temperature. This slow fermentation results in a spice with a rich and complex aroma, very rich in `umami` (the fifth taste, after sweet, sour, bitter and salty). Koji is boiled rice and / or soybeans to which has been added a fermentation culture (Aspergillus oryzae) used for the preparation of fermented foods, the traditional ones being soy sauce, miso, mirin and sake. White Miso is a variant of sweet-tasting miso, made from fermented soybeans with a large amount of rice. It is best suited in spices such as mayo or salad dressings, or in light sauces.

Clearspring founder Christopher Dawson lived in Japan in the 1980s, becoming an expert on the quality of miso products. The Clearspring range is its selection of the best quality Japanese miso products, prepared according to traditional methods. Clearspring miso products are prepared as much as possible respecting fermentation and traditional long-lasting processes, a practice rarely addressed in today's fast-paced era. These processes give the products a rich and complex aroma and preserve their best nutritional qualities. In addition, the ingredients used are organically grown, using hand-prepared koji cultures rich in strong digestive enzymes that break down legumes and grains.

Ingredients: white miso * (water, soybeans *, rice *, sea salt) - 65%, mirin * (sweet rice *, water, fermented rice *), sea salt, onion puree *, wakame seaweed - 1 g, kombu seaweed extract (water, kombu seaweed, salt) -1%. * organically grown. To keep the freshness and quality of miso products, it is generally recommended to keep them cold, but local climatic conditions and personal preferences must be taken into account. High temperatures encourage further fermentation, a process that does not damage the product but alters its flavor, darkens its color and may eventually increase the pressure inside the package.

The salt content of miso ensures the good development of the fermentation process, in order to obtain a product with an optimal and unaltered nutrition. It varies between 5% (for lighter assortments) and 12% (for concentrated variants, darker in color). When using miso paste instead of salt, put 1-2 teaspoons of miso instead of a quarter teaspoon of salt.
