Miso is a paste of fermented soybeans, with rice or barley, being a traditional Japanese food that, according to tradition and recent scientific studies, is particularly healthy and a very rich source of essential nutrients. Today in Japan there are hundreds of kinds of miso, prepared according to different methods and recipes.

Clearspring miso products are prepared, as much as possible, respecting fermentation and traditional long-lasting processes, a practice rarely addressed in today's fast-paced process, processes that give products a rich and complex aroma, preserving their best nutritional qualities. The ingredients used are organically grown, using hand-prepared koji cultures, rich in strong digestive enzymes that break down legumes and grains. They undergo slow, long-lasting preparation and aging processes, being seasoned and matured naturally in cedar barrels, for many months, at ambient temperature.

Inferior quality, most miso products found on the market today are prepared quickly, using automatic processes of only a few weeks, at high temperatures, without real maturation, the fermentation being done in stainless steel or plastic vessels. Although the price of these products is low, they are dull, uninteresting and lifeless compared to traditional products, being uniform in taste and having an invariable texture.

Koji is a boiled rice and / or soybean, to which was added a fermentation culture with the Latin name of Aspergillus oryzae, used for the preparation of fermented foods, the traditional ones being soy sauce, miso, mirin and sake.

Sweet white miso is fermented for only 2-8 weeks, unlike other miso products, which are fermented from one summer to three years, its color being lighter, starting from white to yellow or beige. Creamy, rich and slightly sweet, sweet white miso is rich in carbohydrates and Koji, with a lower soy content than darker variants.

How to use: being an easy to use spice, with white Clearspring sweet miso you can season pastries, sauces, light soups or rice and pasta prepared by stir-frying or fried, you can fill sandwiches (for example with smoked tofu and salad) or sushi rolls. The creamy structure and taste make it a perfect substitute for milk in various dishes, such as mashed potatoes.

Stir-frying is a method of preparing ingredients in a short time, so that they retain their flavors and nutritional qualities. Cut the vegetables and meat into small pieces and fry in a larger pan, usually in a wok, in very little oil, over high heat. You can combine various vegetables and meat, according to your preferences.
Sushi is a dish specific to Japanese cuisine, made from rice (sour with vinegar) combined with various other ingredients, cooked or raw (most often raw fish).
Tofu is a soy curd made by adding a coagulant (traditionally nigari) to soy milk. Available in silk (fine) and cotton (firm), this is an intrinsic part of Japanese cuisine.
