Description
Amazake Clearspring dessert with oats, obtained from only 3 organic ingredients: water, whole grains and a pinch of salt. The result is a sweet, creamy and dense dessert, traditional Japanese, without dairy.
"Amazake" translates from Japanese as "sweet sake", being consumed as a drink obtained by diluting with hot water, a comforting heater during the winter. However, it is very versatile and can be used to give texture, extra protein and a sweet aroma to your favorite pastries: muffins, pancakes, etc. It can also be used to make dairy-free toast.
But what is Amazake?
This "sweet sake" is obtained by transforming carbohydrates from cereals into simple sugars by koji crops, thus obtaining the natural sweet aroma. It is a thick and creamy paste traditionally used in Japan as an ingredient for drinks and desserts and consists of a mixture of boiled sweet rice with koji culture, left to ferment.
Koji - boiled rice and / or soybeans, to which was added a fermentation culture with the Latin name of Aspergillus oryzae, used for the preparation of fermented foods, the traditional ones being soy sauce, miso, mirin and sake.
