Description
Amazake is a thick and creamy paste, traditionally used in Japan as an ingredient for drinks and desserts, consisting of a mixture of boiled sweet rice with koji culture, left to ferment.
Koji - boiled rice and / or soybeans, to which was added a fermentation culture with the Latin name of Aspergillus oryzae, used for the preparation of fermented foods, the traditional ones being soy sauce, miso, mirin and sake.
The natural sweet aroma of this dessert is due to the simple sugars in which the carbohydrates from whole rice are transformed, within a production process that respects the tradition.
Wheat-free vegan product, dairy products, gluten (except oat gluten), nuts or added sugar, certified by Ecoinspect SRL RO-ECO-008.

How to use:
Amazake is an alternative to desserts and cakes, without dairy products and easy to adapt.
Usually, in Japan Amazake is consumed as a comforting drink in winter, being previously diluted with hot water and passed through a sieve.
In any case, this dessert is easy to use for many European dishes. For example, adding Amazake to your favorite fruit puree improves its protein content, texture and natural sweet taste, but it can also be added to pancake dough, muffins or used to prepare skewers without dairy products in the composition.
After unsealing, it is kept in the refrigerator and consumed in a maximum of 5 days.
