Description

Cane sugar from Mauritius

In the northeast of the Cape of Good Hope, not far from Madagascar, there are two important islands located between 20 and 22 degrees south latitude, Mauritius and Reunion. They were discovered in the mid-16th century by the Portuguese navigator, Mascarenhas, and are part of the Mascarene Archipelago.

Cane sugar from a promising land

The Portuguese did not occupy any of the two islands in the Indian Ocean, which were named Ile-de-France and Ile Bourbon in the last century, respectively. They were a major stop for warships and merchant ships sailing to and from the Indian colonies.

The soils of Mauritius are made up of volcanic rocks as well as those of Ile Bourbon. Lava and basalt flows are clearly visible where the earth is exposed. The rocks on the shores show their geological nature through their porous structure, color and composition. There was no volcanic activity after the island appeared above the sea. There were no signs of underground fires on the two islands either.

Their land, suitable for sugar cane cultivation, has provided Mauritius with an excellent opportunity for development, contributing to its economic prosperity. The sugar cane needs about eighteen months to grow and multiply through cuttings. It reaches final maturity in July. Some varieties are then covered with purple hairs, making the fields look amazing. The sugar cane is harvested every year, from July to the end of December.

Taste and travel among our varieties of sugar

The sweetness of the product is reminiscent of landscapes full of flowering sugar cane. Mauritius cane sugar is a local product representing the Ile de France. Its golden sugar, the color of the sun and similar to caramel, is obtained from sugar cane that grows in abundance on its plains and hills and gives a light green tone to this small island in the Indian Ocean.

This sugar produced from the crushing of the cane is purified and filtered. This traditional method is what gives so much heat to the sugar and a raw taste for the most intense emotions. Enjoy a real sugar with a wide range of colors and flavors. The intense magical aroma and taste of liqueur will make you forget what you knew about sugar. It will delight the palace with a caramelized allusion and delight the chefs who use it endlessly to give new tastes to their recipes.

It is essential in marinades, sauces or for the preparation of fruit cakes. Sprinkle it on desserts like crèmes brûlées before baking them to get a very fragrant caramel flavor in your desserts. It will bring a soft texture, a wonderful golden color and a very special scent.
