Amaranth (Amaranthus)

1. Description

It is a very nutritious cereal, with a strong and distinct taste. Flour can be used in the manufacture of bread and pastries. Berries are an excellent ingredient in pilafuri, soups, puddings.

2. Content

Rich in: proteins, amino acids (especially lysine), minerals (iron, calcium, magnesium, zinc, potassium, phosphorus, copper, manganese), vitamins (A, B1, B2, B3, B6, B9, C, K).

3. Main properties

Beneficial for patients with cardiovascular diseases, hypertension, hypercholesterolemia. Due to its high fiber content, it helps to remove the effects due to a diet low in vegetable fiber, acting beneficially on the large intestine.

It tones the lungs, thus being a cereal-medicine in areas with high pollution.

Amaranth bean contains 8% oil. It has a particularly beneficial composition of fatty acids. According to the latest research, amaranth oil plays an important role in preventing breast cancer.

Amaranth caviar

100 gr amaranth boiled in salted water
100 gr. whole wheat boiled in vegetable milk (walnut, cashew, millet, oats, soy, etc.)
Mix the 2 ingredients with 5 tablespoons of sunflower oil or cold pressed
Separately, clean 5 pieces of garlic + juice from half a lemon +5 tablespoons of cold-pressed oil, mix well until a thick sauce is formed.
The juice is mixed with semolina and boiled amaranth and thus we get the delicious amaranth caviar.

The gray can be replaced with 2 slices of wholemeal bread soaked in warm water and squeezed. Instead of garlic you can put red onions - according to your preferences.
